What inspires your cooking?

The islands, our people and the food traditions passed down through generations inspire my cooking. I enjoy taking familiar Caribbean flavours and creating dishes that feel both comforting and new.

What should every visitor try?

Every visitor should experience freshly prepared local seafood. My coconut-crusted local snapper with peas and rice, sautéed vegetables and citrus pepper sauce is a wonderful introduction to the flavours of the islands.

Your favourite local ingredient?

Fresh local coconut. It adds natural sweetness, texture and unmistakable island flavour to seafood, sauces and traditional Caribbean dishes.
